金汤肥牛  Beef in golden soup

金汤肥牛酸辣爽口,非常开胃,因而许多餐厅都把它定为特色菜。其中有酸爽辛辣的金汤,清爽不腻的肥牛,饱吸了汤汁的金针菇。大蒜、南瓜 泡椒、鸡精各适量南瓜常被用来做汤底,宜荤宜素,颜色漂亮,且不抢味,称为金汤。南瓜泥的色泽与黄灯笼辣椒酱非常接近,于是既能营造出金黄的汤色,又能让食辣等级偏低的人欣然接受。肥牛要经过严格的挑选和先进的排酸工艺,通常选择优质的腰背部的“背最长肌”和腹部去骨肌肉修割成形,制成“肥牛坯”送往餐厅,再经专用机械刨成薄片。
