浆 面 条 Paste noodles


浆面条(又称酸面条,其原因是发酵后的浆酸味十足),是河南洛阳的传统名吃,传承千年,流传至今。这道美食是以绿豆浆发酵制作面浆,经特殊工艺而成的面条。

Pulp noodles (also known as sour noodles, the reason is that the fermented pulp is full of sour taste). It is a traditional famous food in Luoyang, Henan Province. It has been inherited for thousands of years and has been handed down to this day. This delicious dish is noodles made of green soybean milk fermented into flour milk through special technology.

浆面条的一个好处就是它非常开胃。首先它的味道是酸味,所以能够促进胃液的分泌。其次,浆面条通常来说煮的都比较软,所以吃起来更容易消化,再加上独特的绿豆浆,可以刺激肠胃的蠕动。

A good advantage of noodles with starch is that it is very appetizing. First of all, its taste is sour, so it can promote the secretion of gastric juice. Secondly, pulp noodles are usually soft, so they are easier to digest. Coupled with the unique mung bean pulp, it can stimulate the peristalsis of intestines and stomach.

浆面条不仅仅味道好吃,另外它也有着抗菌的效果,如果经常喝浆面条的话,那么我们的肠胃对于金黄色葡萄杆菌以及一些其它致病菌的抵抗能力会增强,并且对于身体上的伤口也有促进愈合的效果。

浆面条的特色在于看似烂糊面,但面条筋骨犹存。其汤虽不加味精但味道特别鲜美。汤味略酸,但不是那种放了醋的酸味,是天然的、醇香的酸味,即便是高档的镇江香醋也难及。它原料简朴,易消化,绿豆清火,人所共知。因此它不仅酸味独特,咸香适口、味道美,也易于消化,还能刺激食欲。

It is a natural and mellow sour taste, which is difficult to reach even the high-grade Zhenjiang vinegar. It is known for its simple raw materials, easy digestion and clear fire of mung beans.
